Bruce Lewallen is a 20-year veteran of the culinary industry. Launching his career with an apprenticeship alongside world-renowned chef, John Hill, Bruce opened the Indianapolis Westin Hotel in 1989. Among many accomplishments, Bruce has received recognition and certification from the American Culinary Federation. Bruce attended New York Culinary Institute and Indiana University Purdue University Indianapolis

Bruce's continued success in designing winning systems for commercial kitchens comes from precision and strong ability to lead others.

In July of 2007, Bruce founded Kitchen Doctor in attempt to provide solutions to the barriers of successful commercial kitchen operation.
